Fenway Hotel Welcomes Peter Chea as New Chef de Cuisine at HEW Parlor & Chophouse

DUNEDIN, Fla. (June 17, 2024) – The historic Fenway Hotel in Dunedin, Florida, is thrilled to announce the appointment of Peter Chea as the new Chef de Cuisine at its signature restaurant, HEW Parlor & Chophouse. In his new role, Chea will play a pivotal role in menu development, food presentation, and kitchen operations, supported by Executive Chef Clayton Parrett. With an impressive culinary background and a passion for innovative, high-quality cuisine, Chea promises an exciting evolution for the restaurant’s already renowned dining experience.

Chea brings more than a decade of culinary experience to Fenway Hotel, including roles as Executive Chef at The Chateau Restaurant Group and Chef de Cuisine at Simply Gourmet Caterers. A graduate of The International Culinary School at the Art Institutes, Chea’s expertise spans a wide range of culinary genres, with a special emphasis on creating memorable, innovative dishes. His many career highlights include working alongside James Beard-winning chefs and winning first place in his culinary class portfolio. A strong believer in giving back, Chea helped run a community food shelf at Augsburg College and spent eight years working at Fairview Hospital in their psychiatric unit, both in Minneapolis.
